Italian Tortellini Soup

1 med sweet onion (chopped)
1lb spicy Italian ground sausage
Dried or fresh minced garlic
2 tbsp fresh or dried basil
8oz heavy whipping cream
1 cup fresh spinach or kale
1 package Tortellini (I used Buitoni Chicken & Prosciutto)
8 cups low salt vegetable or chicken broth
Salt/Pepper
Directions
- In a large pot on high heat, sauté chopped onion with a couple tbsp olive oil. Add in spicy Italian sausage and brown.
- Add low sodium broth, garlic, basil, and Betty’s Mambo Italiano Seasoning. Bring to boil then simmer for 20min.
- Add in tortellini, heavy cream, and fresh spinach or kale. Simmer on low heat for 10min.
- Serve with fresh parmesan cheese.
- *Also goes great with warm garlic bread seasoned with Betty’s Mambo Italiano Seasoning!
