Cheesy Chicken Broccoli & Rice Casserole

Ingredients

  • 2 cups chopped broccoli (steamed or thawed)

  • 4 tbsp Betty’s Bombshell Buttermilk Ranch Seasoning

  • 2 cups cooked rice (can use low salt broth or water to cook)

  • 3 cans chicken (drained); or grilled or rotisserie

  • 1 can Cream of Chicken Soup

  • 1 cup Duke Mayonnaise

  • *(Optional) 1/2 cup sour cream

  • Salt/Pepper

  • 1 cup shredded cheese

Directions

  • Preheat oven to 350F
  • Thaw or steam your broccoli, depending on what kind you use.
  • Pre-Cook your rise using stove top method or rice cooker. Can use water or low sodium chicken broth.
  • In a large bowl, mix all ingredients (excluding cheese) until well blended
  • Spread mixture evenly into greased (or sprayed) 9 x 13 pan.
  • Sprinkle layer shredded cheese on top and a light extra dusting of Betty’s Bombshell Buttermilk Ranch Seasoning
  • Bake in oven for 30min.
