Betty’s High Protein Waffles

minutesThese high protein waffles are sweet and delicious! Perfect for a special breakfast, or meal prep several to eat on the go!
Ingredients
1 egg
1 cup Kodiak Brand Protein Pancake Mix
1 tbsp coconut oil (melted)
3/4 cup liquid protein drink (Vanilla Premier Protein Shake)
Directions
- Whisk egg in a bowl. Pour in tbsp coconut oil and stir.
- Add 1 cup pancake mix. Pour in part of the protein shake and begin mixing. Add in rest of protein shake.
- If batter looks too thick, you can add additional protein shake or small portion of water till you get consistency you like.
- Spray cooking spray onto waffle iron. Pour in some batter, careful not to completely fill it as it will expand while cooking. Wait till the beep, then serve with butter and syrup (sugar free optional syrup too).
- If you have left over or extra waffles, let cool completely then bag in ziplock and freeze. Place in toaster oven to reheat.
